Turkey & Veggies with Dumplings

A very easy & quick, but pretty nutritious family meal.

In a big frying pan or electric frying pan add to it, 1 box of chicken stock or use a chicken base with boiling water to make 4 cups.

To the boiling stock add about 2 cups chopped up turkey (or chicken).  I usually use turkey I have in the freezer from a big turkey I've bought when they are on sale, roasted in my convection oven, cut up and put in freezer bags. 

Next, stir in one small bag frozen veggies.  We like carrots & peas.  Or I should say my kids like it because they do not like the mixed veggies with the beans in them!

I then sprinkled on a bit of dry parsley.  I would like to experiment with other seasonings.

On top of all of that I drop by spoonful, a biscuit mix.  Either the  boughten kind or a homemade version.  I whipped up a pretty good one tonight with flour, baking powder, salt & sugar with some butter cut into it until the mixture was crumbly.  To each 1 cup of that stirred in 1/3 cup of milk to make the biscuit mix.  I'll post the exact recipe once I adjust it to make it my own. 

The dropped spoonful's of biscuits will be sticking together if you put a bunch in.  I used 3 cups of the flour mixture.  My kids love the dumplings. 

Then, I let it simmer about 10 minutes without a cover and 10 minutes with a cover.  You might want to scrap the bottom carefully to make sure it's not sticking and burning.
